Cheeseburger Soup
Ingredients: 1/2 lb. ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tsp. dried basil
1 tsp. dried parsley
4 tbsp. butter
3 cup chicken broth
4 c. potatoes
1/4 cup flour
1 cup cheddar cheese, grated
1 1/2 cup milk
1/4 cup sour cream
Method: Brown beef; drain and set aside. Saute onion, carrots, celery, basil, and parsley in 1 tbsp. butter for about 10 minutes.
Add potatoes and beef, bring to a boil. Simmer 10 minutes or until potatoes are tender. In a small skillet, melt remaining butter. Add flour. Cook and stir for 2 minutes. Reduce heat.
Add cheese, milk, salt, and pepper. Cook until cheese is melted. Remove from heat, stir in sour cream.
