Tuna Pie
Ingredients: 1kg potatoes boiled and mashed with a little milk and butter and salt to taste
1 medium-sized onion, chopped and lightly fried
1 medium-sized tin of tuna fish, preferable in oil
200 g cheddar cheese, grated
1 tbsp French mustard
1 tbsp crushed garlic
1 large tomato, sliced
Freshly grated black pepper
A little paprika powder
A little dried tarragon or fresh parsley to garnish
Method: In a large mixing bowl combine mashed potatoes, onion, Tuna fish in oil, half of the cheese, French mustard, garlic and a little black pepper.
After mixing thoroughly, transfer it into an oven proof casserole dish. Sprinkle the remaining cheese on top, then the tomato and a little paprika. Finally, garnish either with terragon or chopped parsley.
Either finish by placing under a hot grill until the top browns or likewise in a moderate oven. Serve with a seasonal vegetable or a green salad.
